Bison is a really good lean alternative to beef...I think it tastes much better too! Here's a grilled bison recipe I love to use, especially in the summer time: INGREDIENTS:
2 lbs ground bison (I get mine from Whole Foods)
1 small red onion, diced
1 T garlic, minced
1/2 cup frozen spinach, defrosted and drained
1/2 to 3/4 cup feta cheese (optional)
Kosher salt and freshly ground black pepper
Place bison in a large bowl with red onion, garlic, spinach and feta and mix well with your hands. Divide the meat into 6 equal portions (about 5 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper. Make sure the grill is adequately coated with cooking spray so your burgers don't burn!
Grill the burgers until golden brown and slightly charred on the first side, about 3 minutes. Flip over the burgers and cook until cooked to desired degree of doneness. Top burgers with wilted spinach and tomatoes for extra nutrients!!
