This dish may LOOK gourmet, but it was super easy to make. One night this week, I was searching through my fridge for something to eat for dinner and I came across some shrimp and collard greens that I needed to cook before I had to toss it out. It reminded me of a recipe that I saw in a magazine a while ago: Cajun catfish and sauteed greens. Bingo! That's what I'll do...sprinkle some Cajun seasoning on the shrimp, and sautee the greens. Now, I had never sauteed collard greens before and I wasn't sure how they would turn out. Holy crap!! They were even better than when I boil them on the stove with chicken broth. If you like your greens a little crunchy and a little bitter, then sauteed collards are for you! I'll never boil greens again.
