Makes about 4 servings INGREDIENTS:
1 1/2 cup cucumbers (peeled and diced)
1 cup yellow and red grape tomatoes, cut lengthwise
red onion, sliced very thin (don't need a whole onion)
1 to 1.5 T Champagne or white wine vinegar (you can also use red wine vinegar or white balsamic vinegar)
2 T Olive oil
Salt, pepper, garlic powder
NOTE: for the vinaigrette, the acidity of your vinegar will determine the ratio of oil to vinegar, so adjust the ingredients according to taste.
Gradually whisk olive oil into vinegar in a small bowl and set aside.
Place diced cucumbers, tomatoes and red onion slices into a separate bowl. Mix in champagne vinaigrette and season to taste with salt, pepper and garlic powder. Let sit for about 20 minutes in the fridge for all the flavors to set. Enjoy!
